NEW Textbook Remix, Page Spread, and Phone/iPad (Work in Progress)
Here's my mood board and textbook spread draft. I plan to take advance of white space to put more focus on the text and the images for ease of reading. I want to focus on the vintage imagery and a modern styled layout. I'm using a combination of Serif and San Serif with my type selection (Avenir Next and Bodoni 72). I'm not satisfied yet with my layout. I'm open to critique.
I've added my cover update, page spread, and phone/iPad layout. The phone/iPad is more rough compared to everything else.
My concept for this project it to put a focus on images that tell a story. Images that invoke thoughts and questions about what is taking place in the world of the image. I plans to use a simple layout and grid system that does not distract from the beauty of the images selected. I also want for the text to be simple to read and comprehend. I don't want the students to have a hard time reading the text when studying at anytime of the day or night. I hope to achieve this through my color palette and grid layout.

Your mood board and type choices are outstanding. Try using the Bodoni Italic on the opening spread. It's very beautiful with the Bold Avenir. The What You Will Learn and Sections treatment looks great, but re-rag to lose the widow. Consider dropping the white background treatment on the essential question. The lay-out is overall very strong but it's at risk of too many chunks. You might run another red bar from the pale orange box to the timeline green to connect the Timeline to the rest of the sections. I'm a little unclear where the page break is; it would help to understand how it connects as a whole. It's almost all the way there.
